Cassava Leaf is one of my personal favorites. The cassava leaf is ground and stewed with or without red palm oil various meats are added for taste. Some Liberian Tribes do not cook with palm oil or eat anything with palm in it on Sunday. I don’t know if it a myth or true history as to why not? Liberia is an African Nation that has always remained independent.
Secondly, This allowed the people to create recipes that are centuries old and been refined over time. For those with peanut allergy be aware that is is used to soften the greens in this dish. Cassava Leaf is also prepared spicy or not. Africans love pepper so it is an option. Like any other greens the healthy benefit is that it aids in digestion and bowel movement.
