Okra Sauce is a staple in many African countries. Take a trip to the motherland with me, Liberia to be exact. A rich culture on the coast of West Africa, Liberia is unique in many ways. The #1 country in maritime and beaches all along the coast. Most importantly, the food is like no other.
Secondly, As a child, Okra Sauce was something I looked forward to having. Everybody does not cook it the same. Different tribes use various meats and seasonings. At the base of this exotic stew is okra and palm oil. The palm nuts are ground and the oil extracted. Okra is a underrated vegetable. The health benefits include but are not limited to:
- aids in digestion
- lowers blood sugar
- dietary fiber
Therefore, after years of being the student/apprentice. Watching my mother make this and several other African women that can really cook; I gained the confidence to start cooking this for my own children. Let’s just say, this recipe has been around for at least 45 years. It has evolved into a more health conscious version that makes pork optional.
In conclusion, The Okra Sauce is served with traditional fufu or steamed rice. The fufu is made with cassava and plantain. We do offer a plantain only option for diabetics (no starch) option. The sauce can be spicy as an option. The containers are microwavable. They come in 6 & 12 oz. containers shipped frozen. The fufu is wrapped in a BPA Food Safe Plastic Wrap.
