Organic Oxtail Brown Stew Recipe

I hit 75 videos so this was my way of showing the Tribe that because you invest your time and money in me; I’m going to keep improving. Thanks for your patience for this final part to my Oxtail Series. I felt like it was the perfect video to move forward and build that bridge from old to new.

This oxtail was a joy to prepare with all the amazing ingredients that gave it such a fresh and vibrant look and appeal. The thought process in the preparation to the finish.

The recipe is my take on Jamaican Oxtail Brown Stew fresh and organic as possible.

Fresh Ingredients
Garlic 1 clove
Thyme 1 Sprig
Onions 1 small onion
Parsley 1Sprig
Oxtail 3 to 5 lbs (2 to 3 in cut)
Tomatoes 1 small
Green Onions pcs. 3 to 4
Scotch Bonnet or Habanero (leave out if you don’t want any spicy)

  • Sprig=Small Stem Bearing leaves or flowers

Seasons & Sauces
Salt 1tbsp
Pepper 1/2 tbsp
Garlic Powder 1 tbsp
Onion Powder 1/2 tbsp
Soy Sauce 2 tbsp
Worcestershire Sauce 2tbsp
Browning Sauce 2 tbsp (Brown Sugar 1/2 & Water 1 cup cook on low heat til it caramelizes)

Green Seasoning (1 cup green onions, chopped
2 cups parsley, chopped
1 cup celery leaves, chopped
1 cup fresh thyme
2 cups sweet basil, chopped
3 tablespoons rosemary
1 cup onion, chopped
1 teaspoon ginger, grated
½ cup garlic, chopped
½ tablespoon salt
½ tablespoon Maggie powder, optional
Blend use as needed l, as needed

Stove Top Ingredients
Water 2-4 cups
Bay Leaf 1
Olive Oil 1/2 cup
Lima Beans 1 can
Brown Sugar Up to 1 cup (Optional: use substitute for browning sauce)

Supplies:
Mixing Bowl
Stirring spoon
Cutting Board
Measuring Cups
Food Processor or Knife
A dutch oven, sauce pot, or stock pot

Cooking Directions:

Oxtail Brown Stew

  1. Season oxtail after marinating with fresh ingredients, green seasoning, and sauces.
  2. Let sit in fridge while caramelizing the brown sugar.
  3. Heat stove to 400 degrees or Hi under pot or pan.
  4. Add olive oil let heat until you see tiny bubbles in oil.
  5. Add Brown sugar or Browning Sauce 2tbsp.
  6. Stir until it caramelizes or liquifies in the pan.
  7. Add the Seasoned Oxtail minus ingredients to a dutch oven, sauce pot, or stock pot
  8. Let it sear on all sides should take about 15 minutes
  9. Lower the heat to about 300 degrees or Med Hi
  10. Add the fresh ingredients to the pot.
  11. Let simmer for 5 minutes.
  12. You can keep in pot or move to Crock Pot. Just make sure you add everything from other pot.
  13. Add Water until meat is submerged.
  14. Let Boil and Simmer Down on 275 Degrees or Med Low Heat 4 to 5 hours depending on how tender you want your oxtail.
  15. Add Bay Leaf
  16. Stir throughout for consistency like every 30 minutes.
  17. The last hour of cooking you want to add the Large Lima Beans
  18. Once it is a stew and the Lima Beans have stewed for an hour you can serve immediately or let cool and serve.

*sear = a nice char on meat.

Rice & Peas Recipe

Ingredients
Salt 1tsp
Pepper 1/2 tsp
Onion 1/2 cup
Garlic 1 diced clove
Water 3 cups
Ground Cloves 1tsp
Coconut Milk 1 can
Jasmine Rice 2 cups
Green Seasoning
Kidney Beans (Cooked or in Can) 1 Cup
Scotch Bonnet or Habanero (I to 2) if you don’t want spicy don’t add )
Peas= Kidney Beans

Supplies:
Sauce Pot
Stirring Spoon
Measuring Cups
9×12 Baking Dish

  1. Add Rice & 11/2 cup of water to sauce pot.
  2. Let water come to a boil.
  3. Pour all the hot water out and rinse as much starch out of rice. Jasmine Rice doesn’t hold much starch. You can also substitute parboil or long rain for this recipe.
  4. Add the other 11/2 cup of water to saucepan with rice.
  5. Mix in all other ingredients back into the saucepan and let come to boil.
  6. Place on oven at 300 degrees for 20 to 30 mins depending on how soft you want your rice.
  7. Serve hot or let cool..
